Commercial kitchen cleaners work with a small set of heavy-duty product categories, each matched to a specific job. Alkaline degreasers for baked-on grease, food-safe sanitisers for food contact surfaces, acid descalers for mineral deposits, machine dishwashing detergents and rinse aids, stainless steel cleaners, and heavy-duty floor cleaners for greasy kitchen floors.
The products themselves matter less than the pairing. Use the wrong chemical on the wrong surface and you either damage the surface, leave residue where food is handled, or achieve nothing at all.
The Main Categories of Commercial Kitchen Cleaning Products
Commercial kitchen cleaning products are grouped by function rather than brand.
These categories cover almost every job in a commercial kitchen.
1. Alkaline Degreasers
High-pH cleaning agents built on sodium hydroxide or potassium hydroxide, formulated to break down fats and oils. They are the workhorse for ovens, grills, deep fryers, range hoods and canopies, where effective removal of stubborn grease is the whole job.
There are two grades in practice. Heavy-duty alkaline degreasers handle deep cleaning and carbonised build-up. Milder citrus-based degreasers are better suited to daily wipe-downs and light routine cleaning, where you do not want an aggressive chemical on the bench every shift.
2. Food-Safe Sanitisers
Quaternary ammonium compounds, usually shortened to quats, and chlorine-based products using sodium hypochlorite. These are applied to prep benches, prep tables, cutting boards and other food prep surfaces to kill bacteria.
Food-safe sanitisers work at low concentrations and are formulated not to taint food or alter its safety, which is exactly why they belong on anything with direct contact with food.
3. Acid Cleaners and Descalers
Phosphoric or citric acid formulas that lift lime scale, rust and mineral crust from stainless steel, dish machines, glasswashers, sinks and taps.
Acidic products remove the scale that alkaline degreasers cannot touch, which is why a properly stocked kitchen carries both.
4, Mechanical Dishwashing Detergents and Rinse Aids
Concentrated, low-foaming detergents made for automatic dish machines, paired with a rinse additive that speeds drying and prevents spotting on glassware and plates.
In most restaurant kitchens, these are dosed automatically rather than by hand, which keeps concentrations consistent through service.
5. Stainless Steel Cleaners and Polish
Purpose-made cleaners and protective coatings that remove fingerprints and smears while helping guard hard surfaces against corrosion.
What you avoid matters just as much here: abrasive powders scratch the finish, and those scratches become places for food residue to sit.
6. Heavy-Duty Floor Cleaners
Alkaline floor cleaners are specially formulated for greasy kitchen floors. This is a safety product as much as a cleaning one, because grease left on the surface creates slip risks for staff carrying hot food.
Applied with a dual-bucket system or a mechanical scrubber, not a domestic mop and a splash of detergent.
7. Drain and Odour Control Products
Enzyme or bacterial drain treatments that digest organic matter to maintain free-flowing drains, prevent blockages and support odour control in floor wastes and grease lines. Cheap insurance against a blocked drain mid-service.

How the Products Are Actually Used: Clean, Rinse, Sanitise
Professional cleaning follows a three-step sequence. Clean first, removing visible grease, food debris and soil with a detergent or degreaser. Rinse. Then sanitise. A sanitiser applied over organic matter is largely wasted, because soil deactivates it before it can work.
Beyond that, proper usage comes down to two numbers: dilution and contact time. Concentrates are diluted anywhere from around 1:10 for heavy degreasing to 1:128 for general-purpose work, and cleaning effectiveness depends on leaving the sanitiser wet for its full stated dwell time. Wipe it off early, and it has not done its job.
Decant into labelled, correctly dosed bottles. Guesswork costs money through chemical over-use, and fails inspections through under-dosing.
Why Product Choice Affects Compliance, Safety and Cost
Compliance
Products used in a food business need to suit both the surface and the setting, with a current Safety Data Sheet on file, correct labelling on any decanted bottle, and staff trained to handle them under WHS requirements.
Local health departments and council environmental health officers look at the process as well as the result, so the right products plus proper records are what ensure compliance.
Safety
Grease that is not properly removed from range hoods, canopies and cooking equipment becomes one of the most common fire hazards in commercial kitchens.
Greasy floors are the other risk, and both are the direct result of under-specified products.
Cost and Asset Life
The wrong chemical strips seals, pits stainless steel and dulls floor finishes. The right ones keep equipment well maintained and hold consistent hygiene standards without you replacing surfaces years early.
It is also worth choosing suppliers who provide technical support, dosing systems and training. That is usually worth more than the cheapest drum on the shelf.

Separate cleaning cloths for each zone so nothing crosses between raw prep, ready-to-eat areas, restrooms and floors.
